Probiotic Chimichurri Recipe

Chimichurri is a wonderfully vibrant sauce that is full of flavour and can be used in a wide variety of dishes such as on meat, roast vegetables or eggs.

Serves 4

 

INGREDIENTS:

2 cloves garlic, smashed and chopped finely

½ green chilli or other fresh chilli you have on hand (remove seeds but keep to add back in when tasting for heat), finely chopped OR ½ teaspoon dried chilli flakes

½ small red onion, diced finely

½ tsp salt

2 TBSP capers, chopped

1 tsp fresh or dried oregano

3 TBSP Protect tonic  

¾ cup olive oil

1 cup parsley, finely chopped

1 cup coriander (+ stems and roots if available), washed, dried and finely chopped

Salt and pepper to taste

METHOD

Combine red onion, chilli, garlic, capers, vinegar, and salt in a medium bowl. Let sit for 10 minutes. Stir in all other ingredients and mix well.

Adjust seasonings to taste, paying particular note to the vinegar and olive oil balance.

Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a week.
